It started the way most meaningful things do — in a kitchen, making cookies for the people who mattered. And somewhere along the way, people started saying: you should be selling these.

It took years before that became a reality. Not because the opportunity wasn't there. But because the recipes weren't ready. And the recipes wouldn't be ready until they met one standard — not a customer's standard. The founder's standard.

The approach has always been the same: take a recipe, bake it as written, then dismantle it completely. Identify what's missing. Identify what's excessive. Rebuild it from scratch using instinct, palate and precision until it becomes something that couldn't have come from anywhere else.

The chocolate chip cookie — now known as The Townsend Noir — took over a decade to reach its final form. Not because customers weren't satisfied. They were. But satisfaction from others was never the finish line. The finish line was internal. It was the moment of knowing — without question — that nothing more could be done to make it better.

That is when a recipe earns its place in the TNT collection.

Madagascar vanilla, pure, sourced at the highest standard, never imitation, brings a depth of flavor that cannot be replicated. Callebaut Belgian chocolate — the professional pastry standard — is the foundation of every chocolate application. Organic sugar. Organic oatmeal. Organic raisins. Specialty sourced spices. Vegetarian fed brown eggs. If an ingredient can be sourced at a higher standard, it is.
